Garden Bounty Skillet Peppers & Onions

2 - 4 peppers, any color, large dice 
1 medium sweet/yellow/white onion, large dice
2 - 4 garlic cloves, sliced
extra virgin olive oil
salt, cayenne and fresh ground black pepper to taste

Heat a large, preferably iron, skillet over medium high heat. When just smoking, add the rest of the ingredients and saute until all is cooked through. Taste, adjust seasonings accordingly.
There are two ways to cook this. As above so the veggies are crisp-tender. They are excellent over chicken and pork, in fajitas or tacos, or just as a side dish. The other way, and I think my favorite, is to turn the heat down to medium/medium low and let the pepper and onions cook until they caramelize. They will be mere shadows of their former selves - not terribly pretty - but the flavor! The flavor is just wonderful! I love to heap them on my steak - just a wonderful combination of flavors. Caramelizing takes about 30 minutes and they need to be stirred often. Caramelized is also delicious with chicken, pork, in anything Mexican, with rice...
